Federal x Hüüp Kenya – Fermented

Developed in collaboration between Federal Coffee and Hüüp Coffee, Kenya Ruiri II undergoes a special fermentation process, distinct from classic coffee processing methods.

This method, developed as part of the R&D efforts of Federal Coffee and Hüüp Coffee, is based on managing the coffee bean's fermentation process under controlled conditions. The goal is to allow the aromatic potential inherent in the bean to emerge in a more pronounced, layered, and balanced way, rather than suppressing its natural character.

The biochemical transformations that occur during controlled fermentation contribute to the development of the bean's aromatic structure. Thus, the characteristic bright acidity and fruity profile of Kenyan coffees evolve into a more intense and distinct cup profile.

Cup Profile

In Kenya Ruiri II, the intense and sweet fruity character of blueberry is felt first. While passion fruit adds a tropical and vibrant layer to the cup, the lemon zest aroma creates a brighter and refreshing finish.

The natural vibrancy of Kenyan beans gains a more distinct fruit character through the liquid fermentation process. The result is a clean cup, bright acidity, high aromatic intensity, and a long, sweet finish.

Roast

Medium Roast

The medium roast profile aims to preserve the fruity aromas developed through fermentation while ensuring the bean's natural sweetness and bright structure are balanced in the cup.

Brewing Recommendation

To best experience the aromatic character of this coffee, we recommend:

  • Placing only the amount of coffee to be consumed daily into the grinder hopper,
  • Avoiding storing ground coffee for as long as possible,
  • Brewing the coffee immediately after grinding.

It is particularly suitable for filter coffee machines and third-wave brewing methods. V60, Chemex, and similar pour-over methods reveal the coffee’s fruity character and bright acidity more distinctly.

This series is the product of the Federal Coffee x Hüüp Coffee collaboration, which treats coffee not just as a product of its origin, but as an aroma experience shaped by the fermentation, roasting, and brewing stages combined.

At Federal Coffee, instead of keeping our coffees in large stocks for long periods, we prepare them with a weekly roasting schedule. In this way, we aim to bring the aromatic character of Kenya Ruiri II, developed through fermentation, to your cup as fresh as possible.
