Specialty coffee refers to coffees that meet certain standards in terms of the region where the bean is grown, the processing method, aroma profile, and quality criteria. Coffees that score 80 points or above in the SCA evaluation system are classified as specialty coffee. The beans we use at Federal are selected in line with this quality approach.
Yes. You can choose the grind size suitable for the brewing equipment you use during the order. We also recommend that you buy your coffee as whole beans and grind it just before brewing to preserve its freshness for longer.

After roasting, gas continues to be naturally released from the beans. The one-way valve on the package helps this gas to escape while limiting the entry of outside air into the package. This helps to preserve the freshness of the coffee.
After roasting, coffee continues to develop aromatically by resting for a while. Generally, about 5–7 days of rest is a good starting point for most coffees. However, the ideal time may vary depending on the bean, roast profile, and brewing method.
The expiration date is located on the package. However, in terms of the aromatic quality of coffee, the first few weeks after the roast date are the most vibrant period. After opening the package, we recommend consuming your coffee within a few weeks as much as possible.
Store your coffee in its original packaging, tightly sealed; in a cool, dry place away from direct sunlight. If possible, store it as whole beans and only grind the amount you will brew.
The ratio may vary depending on the brewing method. For starters, approximately 1:16 can be used for pour-over methods like V60 and Chemex, approximately 1:12–1:15 for French Press, and approximately 1:10–1:12 for Turkish coffee. You can adjust these ratios with minor changes according to your taste.
Instead of keeping our coffees in stock for a long time, we prepare them with a regular roasting schedule. In this way, we aim to deliver the coffee to you by preserving its freshness and aromatic character as much as possible.
Our decaffeinated coffee uses a water-based decaffeination method. The goal in this process is to reduce the caffeine content while preserving the natural character of the bean as much as possible.
Whole bean coffee retains its freshness longer than ground coffee. When coffee is ground, its surface area increases, accelerating contact with oxygen and causing its aromatic structure to change more rapidly. For best results, it is recommended to store coffee as whole beans and grind it just before brewing.
Generally, a fine grind is preferred for espresso, a medium–fine or medium grind for V60 and filter coffee, a medium–coarse grind for Chemex, a coarse grind for French Press, and a very fine grind for Turkish coffee. The correct grind level may vary slightly depending on the equipment and recipe used.
